Author profile

Jason Parsons

Chef Jason Parsons is a preeminent, multi-award-winning Canadian culinary leader, television personality, and cookbook author whose visionary farm-to-table cuisine has spent decades defining the structural landscape of modern Canadian wine country gastronomy. Originally from England but launching his professional foundation with his very first kitchen role at a roadhouse in Southwestern Ontario, Parsons accumulated world-class culinary miles working in some of the most celebrated fine-dining establishments across the United Kingdom, the United States, and Bermuda. He vaulted to national media and literary prominence through his seventeen-year tenure as a beloved resident Guest Expert on Cityline, Canada's longest-running daytime television syndication. This broadcast success culminated in his landmark literary collaboration with fellow celebrity culinary titans Michael Bonacini and Massimo Capra, co-authoring the bestselling national cookbook 3 Chefs: The Kitchen Men. Published by Whitecap Books, the critically acclaimed work was celebrated for capturing the lighthearted camaraderie of the trio while seamlessly introducing home cooks to Parsons’ signature New World vineyard style, which focuses on elevated, locavore Canadian ingredients. In recognition of his massive contributions to society and outstanding professional accomplishments, Parsons was awarded an honorary Bachelor of Applied Science from Humber College. Moving dynamically through 2025 and into 2026, Parsons continues to command absolute authority as the long-serving Executive Chef of The Winery Restaurant at Peller Estates in Niagara-on-the-Lake. Now in his seventeenth year at the helm of the four-star estate, Parsons has spent 2026 spearheading high-profile international showcases—bringing the "taste of place" terroir of the Niagara Region to premium culinary events in New York, Dubai, and Brussels—while concurrently overseeing exclusive, Communal Table pairing series that harmonize estate-grown ingredients directly with world-class Canadian winemaking.
